Koygua

The Koygua is the Paraguayan villager, as we all know. But Koygua is a Paraguayan dish (More specifically Bife Koygua) consisting of steak topped with fried onions and one or two fried eggs on top. Why was this name chosen?

Koyguá is a Guarani word roughly meaning farmer but with heavy rural connotations.
